Fiesta Lime Chicken With Honey Lime drizzle.


Normally, we eat a lot of chicken in the Nesta household. So I'm always trying to figure out ways to mix it up.

I'm a huge fan of meals that have a little bit of zing and a little bit of sweetness and this fiesta lime chicken with honey lime drizzle over rice does just that. Not to mention it's super easy and quick!



Fiesta Lime Chicken with Honey Lime Drizzle
Prep time: 30 min.         Yeild: 5 servings                  

Ingredients:

  • Packet of Chicken tenderloins
  • 1 ½  TBS Olive oil
  • 2 TBS Mrs. Dash Fiesta Lime Seasoning
  • 1 TSP Garlic seasoning
  • 1 TSP Sea salt
  • 2 TBS Honey
  • ½ Lime

 Directions:

Heat large skillet on medium-high heat using ½ TBS olive oil to coat the pan.

In a small mixing bowl combine 2 TBS honey, 1 TBS fiesta lime seasoning, and ½ lime juice mix together and set aside.

Cook rice as directed on the package or as directed on a rice cooker.

In a large mixing bowl, combine 1 TBS  Olive oil, 1 TSP, sea salt, 1 TPS garlic, and 1 TBS Fiesta Lime Seasoning.

*Optional: Cube chicken tenderloins into bite size portions.

Coat chicken in seasoning and olive oil mixture then place evenly spaced in the hot skillet, cooking thoroughly until no longer pink.

Once chicken and rice are done cooking, in your bowl or plate place rice on the bottom, your cubed or whole chicken tenderloins on top then take your honey lime mixture and drizzle on as desired!

And there you have it, a super yummy dinner that is not only easy to make but easy to cook as well. It's a big hit in our house hold and the little ones love the sweet and tanginess of this dish.
